I married a Polak, and she knows sausage! she was kind enough to give me an early Christmas present. she bought me an 11 lb sausage stuffer. with the request that I make her sausage. in southern Illinois, we do not have the kind of delis they have in Chicago. she is used to running down the street to a Polish deli with 50 different kinds of fresh or smoked sausage. so, I made a batch of deer and pork kielbasa for Christmas.

a small 10 lb test batch. pork, deer, salt, black pepper, garlic, marjoram, and cure #1.

linked it up, and resting in the fridge overnight. I'll throw in the smoker in the morning.

Must be that time of year. Few days back I did 12 pounds of smoked breakfast sausage.........also as a request......from my daughter.

Now it's on to some sweet Italian and smoked polish. I hope my polish turns out that well. Curious how you went from the big coil to tied off links. No surplus casing to tie string to.

Yes, using the grinder to stuff flat wears me out... definitely worth having another dish to clean and using a stuffer. The sausages look delicious!

my wife is on the phone with her folks, speaking polish, and it seems like every 2 minutes the word kielbasa gets dropped. she was so excited that this batch was a success, and very similar to what she grew up with, she made me a batch of Kolaczki (cookies).
