Yes you remove the tongue, brains, and the jowels, the tongue I prefer it skinned but doesn’t have to be, then pickle it, the brains you skin and fry them makes a wonderful sandwich, the jowels are a very sweet and tender cut of meat that you can make bacon out of.

i like to scramble the brains with eggs. to bad a hog has so little. i like cured and smoked jowls in a pot of beans. kinda figured they got boiled too for head cheese.

Head Cheese is a simple recipe.

Boil the head for a long time. A full day / 24 hours.

Remove the head and pick meat.

Set meat aside.

Boil / cook down the liquid from the head boil until reduced by at least half and it's getting thick.

Mix the picked meat and reduced cooking liquid and pour into a loaf pan.

Chill.

Seems to me that souse is spiced and vinegary.

Had a friend in Eastern NC who owned a meat packing company. They made a lot of souse. The NC health department did not allow the sale of pig ears. He bought large quantities of ears from Iowa to make souse.

Iowa is #1 in pork production and NC is #2.

I can get heads when the farm sends in pigs some times.

they all come with the brain scooped out and cut in half with a bandsaw from the snout up between the eyes.

cut the eye out and a good rub of brown sugar , salt and spices cooked in the oven for a few hours

that jowl meat is great


America only has one issue, we have a Responsibility crisis and everything else stems from it.

We always removed the Jowels and cured them for bacon (my favorite bacon )and removed the brains . The tongue went In the head cheese pot. With the skin , ears , snout and skull . I know grandma also put sweet pickles in her head cheese. I don't know what spices she used

Danny I battered and fried som tongue a couple nights ago with the liver and onions . You dont have to skin it , but you can tell the skin is there . You can bite through it . I leave mine on . It fries up just a little more tender than chicken gizards . The only problem is there is not much more than an appetizer from one pig .

mom use to make head cheese every fall in bread pans , sure miss it , slice of cheese cracker and a drink , YUM, I will look to see if I can fine her recipe

Just bought 2 lbs. $4.99/lb. This is some GOOD stuff. Just remembered that my dad used to put the feet in, also. All those tendons make some good Jelly. And toe jam.

My grandfather used to make it,he was from Russia and I think he called it holadetz.
