Wish I had my grandparents recipe She made the best souse meat that Iv ever eaten It wud be abt this time of year when they would kill hogs I sure miss it. Good luck Y'all to ? Some of my earliest memories where me freezing my tail off up at the community "camp" watching the annual hog killing. Eveyone would go in a on a dozen or so big hogs and eveyone would hel raid and dispatch them when the time came they would bring them up to the camp and their would be a station for everything, from gutting to pulling hair ,cleaning the intestines ,cutting chops and hams and probably them most prestigious of them is the hog head cheese table. Man I never really at it but I'd sit and listen to all the stories and cussing as they made it.... Most if them ole cats who organized it have since died out and most of the kids my generation what noting tondo with it. Either that or their too greedy to do anything like it.......Man I miss them days.......

My dad usually made a small batch every year. His was great. I have a couple places that I buy some from every month or so. You take your chances---win a few---lose a few. Love that nasty stuff!!

I watched the show Dirty Jobs. Mike was making something on there that looked like what you are talking about. Watching was enough to make me know that was something I could live without.

I wish we had done something like that. we did a few things fish 4-5 of us would go out and limit out on perch and have a big fish fry ,the guys caught and cleaned. we had 55 gallon barrels in my great uncles back yard with wood planks across them for cutting boards. I was always on scaling duty when young. I scaled a lot of fish. the ladies would bread and fry them for dinner I guess we had deer camp we would setup the garage for boning out deer I started this in 2002 and ran through 2018 , no camp the last 2 years with my great aunts health issues 2019 and 2020 , she has the house we would hunt from built by my great great grandfather in 1888 and thus far always been in the family. A friend and I got together a couple times and did runs of chickens we got our families together to butcher our biggest run was 100 birds we tallied up our costs split them even and took 1/2 the birds each we could sell them, or keep them as we wanted.
America only has one issue, we have a Responsibility crisis and everything else stems from it.

when you make head cheese do you remove the tongue? do you skin a hog tongue like you do a beef tongue? do you remove the tongue, skin it, and toss it in the boil with the head? do you remove the brains or are they part of the boil?
