I have a small crock that I made about 5 quarts of kraut last year. I probably don't need much more than 5-6 quarts, but it worked pretty well. This year I will experiment with some caraway seeds as well. I like mine sour, but I washed mine a bit too much last year and it was less sour but OK. I also pressure cooked mine after putting in quart jars. I like it mixed in with some cut up spicy hot dogs or brats etc.

Ii like them both, sweet or sour. But I can only eat Kraut when I have zero plans for a couple hours.....I do feel clean the next day though.

you're only allowed so many sunrises... I aim to see every one of them!

Pro tip- put sour on your brats but then add a little thousand island. It will remind you of a Rueben and you will thank me

I like sour kraut, the only kind I have ever eaten. Homemade was the best too. I also never met a pork chop I did not like but for the life of me, I can not imagine combining them!

Chop up some pork chops, fry them, dump the homemade kraut in with chops, cook till kraut is ready, yum yum

I was just talking to my Bride this afternoon about our supply of homemade. It is low. I made a small batch early in the fall and canned 11 pints. Down to 4-5 is all now. Gunna have to work up another pail full soon. I have never tried the "sweet" stuff, but have now put it on my grocery list to taste test.

Wonderful elderly church lady would bring a sweet Kraut and Kielbasa dish to all the church dinners.
She never had to take any back home.
I was pleasantly surprised and really liked it myself.
