Cooler. You can pack stuff in chest freezers if necessary, then hang it in a walk-in cooler to thaw. Or hang it while waiting to process, in which case you don't want it frozen.
Boco couldn't catch a cold. But if he did, it would be Top Lot.

Freezer for sure. Everything I have is either drying under fans or into the freezer waiting to be thawed out and fleshed so no reason for a cooler in my shop. Besides in Febuary when I am thawing things it is like a cooler in some of my shop. LLL

I have both but the freezer is what gets 90% of the use for my fur stuff.
My fear of moving stairs is escalating!

You sure got that right Rat. Add extra insulation and that will help. Older chest freezers are more economical to run if that gives you enough room.
