So, I made a batch. I wanted to do a summer beaver, but I had no luck today. Water was so high that nothing was caught. So, I dug some beaver meat out of the freezer. Started off with two pounds of frozen beaver meat that I had cut into bite size pieces. Sorry about the pic being fuzzy. After thawing, I browned the meat, added water, salt, pepper and let it simmer. While the meat was simmering for 2.5 hours, I cut up the veggies. (Taters, onion, mushrooms, carrots and celery) Once the meat had got done simmering, I added the veggies. Then added beef stock. I covered it and let it cook for 30 minutes so the veggies would get done. Them I added a mixture of cold water and flour to the stew to thicken it. And then it was time to eat. It sure is some yummy stuff!

Looks great,I love all kinds of stew. Did you ever try some dumplings on top in place of the flour in the stew? Best thing about stew is the leftovers tastes even better the next day.

When I want to thicken up any stew....I pull out a cup or two of meat ..veggies..and broth....and use this emulsifier, then pour that thickened slurry back in the pot. Works slick !

That looks delicious. I've only had beaver a handful of times, mostly roasted. I like it. The taste and texture reminds me of roast beef.
I like your pot too, enameled cast iron I'm assuming?
