So, fall is in the air & hunting season is just around the corner. I have 15 pregnant rex does set to kindle in 2 weeks, as well as a large batch of meat chickens I'll be butchering around the same time. So, I need to make some room in the freezer. We are preparing for the harvest to come, and decided to can some deer roast. Was able to get (5) 2.5# roast out of the freezer. It may not sound like much, but it's a lot of ready made meals that are shelf stable. Each quart of canned deer meat will provide at least 2 meals for my family. For instance, I'll make peppered deer steak one night and use the left overs for a pot pie the next.

We use quality cuts, a nice roast is perfect for canning

very nice , not much faster than making a meal of canned meat.

my oldest daughter loved biscuits and gravy with canned venison

I could whip up a batch of drop biscuits in about 5 minutes they needed 12 to cook in the oven. in that time I could dump a jar of canned venison in the big skillet add flour to the jar and some water shake it and the gravy was ready as the biscuits were coming out of the oven.


America only has one issue, we have a Responsibility crisis and everything else stems from it.

I just canned 30 pints of tuna, and froze 9 quarts of chopped chowder clams froze 35 lbs of medium shrimp, and about 16 gallon bags of Roma tomato. Pretty soon in will be turnip greens time, then,broccoli,then ,our favorite veggie. collards can been cooked and frozen. Hope to also have a good crop of spinach, peppers, and Swiss chard.
