Where did you see it? It sounds a lot like wiregrass. North Carolina is quite a ways out of it's normal range. I am located right in the middle of the wiregrass region. For more information on wiregrass see- WIREGRASS

I can post a picture but someone on my Facebook said it is an ornamental type of grass. Grows in a bunch. About two feet tall, Sort of wire-like. I pulled up a few stragglers, tried to taste it. Nothing. Has to be for the nursery trade I think. Why would you try eating some grass...?
