Lard was an option, so I asked for some. I want to try Lazarus Bacon bait recipe.

Typically a 270-280 lbs. fed out hog will hang at about 70% and some will get you about 55% of meat. Take all the lard they will give you. I use it to cook and bake with instead of butter in things like waffles etc. No added sodium etc. in lard.
We are fortunate in our area, as we have very few hog operations but there are several meat markets and stores that have some really good pork specials quite often. Lean pork on the board is down to the mid $70s so pork is not tracking beef to closely. I don't look for bacon when it is high. I buy bulk ground pork and then season it at home for sausages etc. and eat that instead.

$195 for 250lb pig live weight and $340 to process it at the new place it went to the old place was a $100 less but the seller was going to the new place or we had to wait I felt this was no time to dally the way things are going.
