I bought a 19 lb alligator garfish roast from a commercial fisherman. I processed it and cooked some tonight. As good as it gets. If you haven’t had it, it’s texture is nothing like catfish. It’s like tender alligator or chicken. I cooked some naked (no batter) and some in an egg wash

Have to release alligator gar here but I have never seen one. Have long nose gar. They are good. Don't get a chunk of meat like that one though.

Alligator gars get large enough to cut roasts. The spine and ribs form a 3 point star. Alligator gar get large enough that you can easily fillet slabs off of the roasts.


36” ones will give you enough meat to cook. A 60”+ one will give you enough meat to invite everyone over plus put some in the freezer. A 72” one will provide a LOT of meat. A LOT.

The ones you mentioned would probably be the same, if you can get them big enough

long nose gar are NOT full of bones. take a hatchet or corn knife and give one a whack right behind the head to get a cut in their hide. use a pair of tin snips and cut the hide all the way down the top of the back. Yes you need tin snips. Then using a knife start in the cut and skin down the side. there is a strip of whit meat on each side you cut out like taking the backstrap from a deer. it is white meat, boneless, a lot of it, and very good.

do NOT eat gar eggs. I have been told repeatedly the eggs are poisonous

we grind them and make patties out of the meat. It is very good.
