... this post is about how to make green beans fit to eat...

.. burn some sausage and bacon in a cast iron skillet..

Them beans should absorb enough of the good stuff to make them taste pretty good. But like someone else mentioned, could have used some onions too.

If ya go to a family get together, the ones that brought a casserole are the ones that can’t cook. Anybody can fix a casserole. What ever you want in it an add cheese. That simple, I refuse to eat it.

You cook bacon. A bunch of it, not the couple pieces you got floating around in there. When it's half done, add some diced yeller onion. Stir all that around until the onions cooked. Add the green beans, and a little water, and simmer it, covered, all day until the beans are falling apart.

I’ve been plenty hungry. So hungry I wanted a wish sandwich. 2 pieces of bread and wish I had something to put in the middle.

Would you call Pig Ears & Beans cooked by my grandmother a casserole? Me neither!

But, back to those beans. Chunk up a couple onions and throw in the pot. It’ll be good!

That’d be good savell.


What I do is wet the bottom of a pot with oil OR a healthy helping of cut up bacon. Then I throw in some smoked meat like tasso, smoked ribs, smoked turkey wings, etc.

As soon as the meat gets sizzling, I start cutting up some onions. Yellow, green, red, whatever I have on hand. Throw them in too.... when they start to wilt, I’ll throw in a few cups of broth. Chicken/beef, it’s your preference... stir.


Throw in snap beans and cook until tender. Add seasoning to taste. Add water as needed. Adding a lid to the early stages let’s me cook them down without losing as much water. A lot of the seasoning depends on how much seasoned meat was added.
