Ain't nothing yankee about it. Oyster stew is as southern as gumbo down on the gulf coast. Just not widely known in the upland south. Same for oyster dressing. Smoked mullet would be another gulf coast thing.

Oyster & Crab Stew

1/2 bushel fresh shucked oysters (about 2 QTS.)
2 LB. of Blue Claw Crab Meat
1 LB. of cooked and chopped "Double Smoked" Bacon with drippings added
2 Gallons of Whole Milk
1 QT. of Heavy Cream
3/4 cup Worcester Sauce
3 Tbsp. of fresh cracked Black Pepper
3 Tbsp. of Old Bay Seasoning
3 Tbsp. of Cayenne pepper
2 Tsp. of Celery Seed
3 Sticks of REAL BUTTER

Cook oysters separately with their liquor until edges curl. DO NOT OVER COOK! Heat milk and cream and add all other ingredients. Add oysters and simmer for 5 minutes.

You can + / - the seasonings according to your individual taste

Are we sure you mean TABLESPOONS of the peppers and Old Bay?

I like cayenne and that looks like to much.

And quite frankly Old Bay is over rated.

Yes, TABLESPOONS

Anyone just roast them?

The old (ancient) oystermen here used to shuck a few into a coffee mug and add a splash of vinegar and slurp away.....

I never cared for oyster stew but in New England the recipe that Nessmuck shows is the way I am familiar with. Pretty simple. I do like oysters grilled, steamed, baked and in oyster dressing. We always have dressing for Thanksgiving. Never have been a fan of raw seafood.

Prepare to your liking, but don’t over cook them, which is easy to do.
