Good crawfish boil would be complete without someone breaking a some kinda side by side / 4 weeler.... I really need to get one of these , spent the last hour playing the magic school bus driver with a all the kids and amn their fun grin

Looks good wolfy. We do a crawdad boil every once in a while, but don't get into enough to make a big meal very often. Only in flood years can a fella find crawdads in big enough numbers to make a community feed. Kids and I try to find enough for the family to have a good meal or two every summer. Guess that is the price I pay living in KS. Throw in a few fried snapping turtles and you got a feast made for kings.

I've never ate them but wouldn't be opposed to it at all. I used to get quite a few out of the creeks here as we used them for bait on setlines.

Too bad our stupid invasive species laws make it nearly impossible to get live crawfish shipped to Wisconsin from a reputable dealer.

There's a local guy that catches decent sIzed ones up north on some bigger lakes. We do one or two boils a year. Good fun and good food.

I like to pop the tail meat out and fry it in butter and garlic. Boiled is good and popping that meat out takes awhile but its how I do it.

I have been to a couple chinese buffets where they serve all you can eat along with scrimp and mussels. The place I go when I feel like it. They cook them with jalapenos. Used to buy them buy them already boiled by a paper lunch sack full when I was in New Orleans. Tasty!

Only place around here to get boiled crawdads is Ameristar Casino in KC. Got a buffet thats ok and a brewery that produces some real tasty beer.

Jambalaya

JAM-buh-lie-yuh

It is a cajun/creole version of a Spanish paella rice dish. Meats cooked in a stock with rice added near the end to cook in the stock. Creole must have tomatoes.

Classic jambalaya uses sausage (a spicy anduille type), smoked pork (ham/tasso), and chicken. Though any combination such as shrimp, gator or fish can be used.
