I always pickle it because of the bones. Some grind it for fish balls.

I usually pickle them too.. I have had it ground and fried as fish balls. I've also smoke them but it's been awhile since done that.

We used to pressure can them and the bones pretty much dissolve away.Then use as you would Tuna.

I pickled a bunch in 2020 with no school the boys were down at the river every day catching them

I have eaten redhorse of various species my whole life. I treated them the same as any other sucker, usually canned or smoked. They are also very good fried or baked. The bones can turn off some folks, but their meat is mild, white flakey stuff. One favorite method was to gut and toss some onions in their cavity, along with butter and salt/pepper, wrap in tinfoil and toss in the coals of your riverbank fire until done. it is excellent eats. They can grow to trophy size too, usually much larger than our other two commonly taken Great Lakes area sucker types..........those being the Northern Longnose and the White sucker.

I've eaten them smoked, ground into fish patties(heavily seasoned) and as the veggies they grow when buried in the garden. Best when taken from cold/clean waters.

My Grandmother canned a lot of sucker fish, venison and chicken it looked gross but tasted good.

I never canned suckers but canned lots of other species. I pack pint jars with as much as I can get in. Add a 1/2 teaspoon of non iodized salt and pressure them for 1 1/2 hours. To eat we add 1 egg per pint and crushed into meal saltine crackers. Add enough crackers meal to thicken it up some. Make patties and fry them. Sometimes I put miracle whip on them in a hamburger bun. I tried cheese but it doesn't go with fish patties to good.
