Actually lambs quarter and red root pigweed are two different plants, as far as eating I’ve spent too many years and too much money killing it to enjoy eating it.

Lambs quarters= light Goose Foot pig weed = ameranth

My go to garden wild edible is purslane. It has the same omega three fatty acids as fish wich I'm allergic to cry.
It goes good with sour curlydock and wild mustard.
And the wild spinach n Amaranth

That’s one reason I’m not a fan of when people use the them pigweed as general reference, because in Iowa red root pigweed and lamb’s quarter are the terms used and are two different plants with different growth periods.

In my first comment, I thought Danny was talking about purslane. But I have not seen much of either weed this spring.

Made another batch of pickled eggs and had a few that wouldn't fit in the jar. Removed the yolks and had them for lunch. Chopped up the white. Got lamb quarters cooking right now with a little salt and red wine wine vinegar in water. I like to boil them for them for a few minutes. Then add the egg.

Put a little beef broth in the insta pot. Added broccoli, califlower chopped up bell pepper, onion, chopped up radish, worcsetshire sauce, and diced tomatos with green chili. Salt and pepper. Laid some beef round steak on top. Set it to pressure for 30 minutes. When its done I will remove the beef and thicken up the soup with cheese.
