Have a friend with the alpha-gal allergy from a tick bite. I asked you he thought Canada goose might be ok and he said he's willing to try anything besides more chicken LOL.
Dropping these off for him this week... hopefully it works out for him. Tastes remarkably like beef when prepared this way.

No marinade.
1 tbsp kosher salt
1/4 tsp black pepper
1 tbsp curry powder
1/2 tbsp garlic powder
1/2 tbsp onion powder

Brush sauce
1/4 cub brown sugar
Big squirt of ketchup
1 tsp Worcestershire sauce
1/2 cup white vinegar

Grill at 250 10 minutes, flip, brush grilled side
10 minutes, flip, brush 2nd side
10 minutes, flip, brush
10 minutes, flip brush

I move them up to the top rack at this point and continue saucing until med rare

I should mention you NEED to trim all silver skin before cooking or it will be like show leather

I like it, but I wouldn't replace it.
I have done a tear down/ rebuild on it just this spring. 2 full seasons and it needed new door switches ($30ish).
Will probably need a new briquette grille in the hopper by fall and a new diffuser box at that time too.

The finite temp control is nice but I'll probably get myself a Napoleon gas grill and a Weber kettle when this thing dies.

I understand. Gave mine away. It quit on me half way through a cook. I haven’t purchased another smoker yet. But when I buy another one it will quit when it runs out of wood. I’m 100% done with the electric smokers/grills
