I believe you would be better off skinning as many as you can and finish in the morning skin and freeze.

When we trapped ND we dried wet rats and skinned the next day. 25 skins In a plastic bag. Used a vacuum cleaner to remove as much air as possible from the bags to shrink things down and then Into the freezer. We came home with 2,500 rats and never had any problems.
200 or 300 rats a day to skin that's no big deal for 2 guys. Just a few hours work.
