I made a small batch of jerky from that deer I got. I tried to make it as low carb as I could. For the marinade, I used coco aminos (soy sauce substitute), Worcestershire Sauce, liquid smoke, mustard, black pepper, red pepper flakes, smoky paprika and swerve (brown sugar substitute).

I dried it in the oven. I've always used paper clips to hang the meat with. I open them up to make an "s" out them.

I line the bottom with aluminum foil to catch any drippings.

Then hang the meat from an upper rack.

I set the temperature to the lowest setting, which in this case was 170F. I put a wooden spoon in the top of the door to allow the moisture to escape.

Took the jerky from the racks.

I've done a bunch in the oven that way. I use tooth picks to hang but love the paperclip idea! Gotta try to substitute the Aminos for soy sauce too, good idea. I like the Aminos better on everything else so why not.

so sauce is 0.8gram per table spoon I figure how many table spoons could a little strip of meat actually soak up

I use Soy , worstishire , red pepper flake I omitted the sugar a while back.

soak then I use the food dehydrator with trays

my son informed me the jerkey party will be right after gun season 2 of my kids and 2 of their friends get a bunch of their venison together and they marinade it and spend the weekend changing trays and playing video games


America only has one issue, we have a Responsibility crisis and everything else stems from it.

It gave it a milder flavor than soy sauce does.

Looks good. But after the first batch in the oven Mama got me a dehydrater for Christmas LOL. Smell in the house was the ticket....

Now you will have some sore teeth and gums after chewing that jerky for several days. smile I used to eat a bunch when I traveled long distances to new traplines across the U.S.. Now, do it in moderation so my teeth/gums don't get so sore. Could be it was a bit too tough also.

There's a fine line getting the toughness of jerky just right.

Never did use sugar of any kind in my jerky. Just soy, worschestire(which also has soy and thinking of just ditching the soy to cut down the salt) vinegar and liquid smoke for the marinade.

I make mine in the oven too but never thought about hanging the strips, always just lay them across the racks.

How long does it take to dry in oven? I use a dehydrator. That sure does look good.
