When fishing tarpon in the remote camps in Costa Rica they have locals cooking/baking. The pies and treats they make with fresh jungle fruits are not surpassed on this planet. Your topic here makes me wish they made a banana bread but to date I’ve not heard of those gals doing any.
I’d prefer mine without nuts.

There is no better banana bread that one of the girls at our ladies turkey camp made last spring, sliced up, and gave each of us a slice to enjoy with our morning coffee while we were out turkey hunting. I don't know what the recipe was, but it was hands down the best I have ever had.
