Went and gathered up some wood this morning I have cut over the summer. I decided to take a short walk to see if I could get one pheasant for a meal. It was my lucky day!!! In a quarter mile I had seen at least 50 to 75 roosters and one dumb one sat too long. Lol

What would be a good way to make one? Can you pan fry them if I strip cut the breasts?

Dip in egg then flour or breading sear in hot oil don’t overcook it.


Was born in a Big City Will die in the Country OK with that!

My son went on a Tower shoot (not hunting) and brought home about dozen or so and we fried them up. I know they aren’t wild birds but dang it they were good eating!

Ive tried smoking several times different temps for different times. Always dried out. I agree frying in hot oil is the best along with grilling wrapped in bacon. It dries out easily. Maybe im overly concerned about getting the temp to 165?

A lot of birds and a lot of cover. I didn't kickup or see one hen all roosters and a lot. Lol

Bone out the breast and place between plastic. Pound to tenderize and do as Law dog says and pan fry turning a few times.

Here is a recipe from the 1993 edition of the North American Hunting Club Wild Game Cookbook. I’ve been making this dish since soon after I got the book 20 years ago. It’s a family favorite, everybody loves it.

My grandson and I were out this morning. The dogs put up six pheasants, all hens except one. I limited out.

Best way I find for game birds is a casserole, bone out the bird and cut into small pieces , cook with a couple or 3 strips bacon just to almost done. Add a cup or two of cut up veggies onion carrot celery mushroom ext. mix this with some macaroni noodles again almost all the way cooked add some cheddar cheese, and a cup or two of chicken gravy, bake for 30 minutes. You can also add bread crumbs to the top. Absolute best !

On my place a dog would work good I would think. They get so far ahead of a guy so don't know if a dog prevents that or not.

Late season birds, the ones that run stay alive… typically.

Birds live by their ears and eyes, they’re grouped up now. Pushing into blockers is the best way at this time of the year.
