Check out Dunn's custom knives by
.
Steve Greene Melvin Dunn was the founder of the company and later sold the business to Steve Greene And Steve has since than relocated to FL. He sells skinning knives made with D2 steel That is a very hard steel and it will hold and edge for aIl 3 d models /different styles /sizes made by Mel/Steve They are not cheap but they last a lifetime AND you can do a lot of skinning with a knife that holds and edge Others has mentioned ..I also have grown to like the replaceable blade Prianto especially for the large tough coons that hope to be skinning when they are really prime I f I have a lot of different critters to skin I generally sharpen a few different types of knives Then I will start with one that works well to open the pelt up as I go and work from there Often I will use 3 or 4 knives to skin each animal If yo using a knife well suited for certain animals you will most likely not dulling the blade as quickly Also use a knife that fits your hand When skinning a deer I have found that the Buck 107 is an outstanding skinning knife for me to skin a deer from start to finish Also I have learned that a knife that is easy to sharpen with a few strokes with a steel sharpener is better than than a blade made wth a harden steel .

A hooked utility blade for opening cuts, or a thin paring style knife, switch to a serrated victorinox or similar to cut around or against bone.
I used a scalpel type once and found it almost too sharp... YMMV... grin

Bummer. They are what folks need who have a lot critters to skin.

I always used a cheap pairing knife and had a Rada pull through sharpener on my skinning table mounted to it. A couple of pulls through this sharpener got the blade back reasonably sharp and fast.
