I haven't eaten bread in around 2 hrs due to weight and high sugar.i found carb free recipe online doesn't taste bad.made it today.
Cup of almond flour,half cup coconut flour,6-12 egg whites.2 tsp baking powder.I used 6 whole eggs and added half cup canola oil to stir and a third cup no salt carb free butter...microwaved for 4 min.
Add cinnamon or whatever no carb topping u like.

Have never been able to find a way to test it, but I am convinced that a true sourdough bread ought to be low carb.

True sourdough is really nothing more than flour, water and salt. The yeast and bacteria in the starter culture go to work on the starch in the flour, first converting it to sugar, then the yeast go to work on that to convert it to CO2 gas and alcohol. By the time the bread has finishing proofing, most of the carbohydrate that was in the flour has been mined out.

Only way I know to find out would be to make some, then send it off somewhere to be tested for carbs and fiber. I don't know where that place is.

wwr, are you saying you just cooked it in the microwave? Doesn't sound good but I'm interested in trying it because like you I'm on a low carb diet. It's done wonders for me. a1c from 9.2 to 5.6 and lost 90 pounds in the last year and a half.

I get the carb smart tortillas, 3-4 carbs, it's mostly fiber and claims to be keto friendly.

My wife take those carb smart tortillas and makes pizza using a low carb sauce. She makes them in the air fryer. They are actually quite good.
