My wife won't eat them with skin on,me makes no difference.but to keep peace fillet them and either dip in beer batter shore lunch or Andy's and use that as a dry batter and deep fry till golden brown.

Bluegill skin has an added flavor that I like. Skin on for me, filleted or whole.
