Those big snails have some tasty back straps. Butterfly them out and butter fry them with garlic.

I was recently in portage Wisconsin because of a family member who passed.. my cousin suggested a restaurant there and they had snails on the menu. Our group decided that we would all at least try one… My impression,, a chewy piece of something that tastes like dirt. Not something that I really would eat again. Any one else try one with the same impression?? However… the dipping sauce for the mozzarella cheese was absolutely the best tasting marinara sauce I’ve ever tasted…. And the steak was amazing… every bite was super tender,,, and the marbling and carmelized portions was flat out delicious!!! Escargot is good, got to slurp. Hey.....which restaurant did you go to?I can't imagine any place in or around Portage having escargot unless maybe the casino had something.
