X2 for specs. A Canadian goose with white fat. Take breast and treat it like back strap. Cut medallions dry rub pan fry medium rare. Better than back strap because it is more tender, otherwise identical

I've always been kind of partial to pheasant. I like it cooked slow, something like pheasant and dumplings or even pheasant soup. It has more flavor than chicken. It's okay roasted, but I struggle to not dry it out.


Just give me one thing, that I can hold on to. To believe in this livin' is just a hard way to go.

I never ate any meat I thought inedible. ( coyote was the worst) Lots of good ones mentioned. have not tried them all. Moose, elk oryx rabbit squirrel, pheasant quail venison beaver, all make a mighty fine meal. Fire cooked aged corn fed beef rib eye is still my favorite.

As to caribou….kill a stag that’s in rut, they are inedible. You can detect a smell in the fresh blood. Even the regulation digest in Newfoundland/ Labrador advises not to shoot rutting stags.

I had a neighbor needed a couple hours of labor to load some furniture and I had also helped out in the ammo shortage. His sales job included some paid for high fence hunts for his clients so in payment he offered me a small freezer full of professionally processed exotic game.

Long and short of it- we got to try white tail next to both sitka and axis deer. The sitka was very good, but the axis was incredible. The escapees are starting to take root in So. Texas and I look forward to doing my civic duty every time I see on in cooler weather.

When it comes to horned/antlered game I have one absolute favorite......Moose. I also very much enjoy Ruffed Grouse, Pheasant, Snapping Turtle (fried), Brook Trout, Flathead...........oh crap, I like about all wild game and fish.

All three the same way. Fillet the meat off the bone, dredge in milk & egg, then in ground saltine cracker. salt n pepper. Brown over fairly high heat to stick the dating on, and then steam fry till done. Ya wanna cover but let the steam escape the pan while finishing.

Scaled quail easily surpass the other two but availability can be a challenge.

WOW, my initial thought was muskrat and quail/grouse.
But this list puts many items on an even keel.
So, I find it hard to discriminate on this one ...... but now I AM hungry smile
Imagine a restaurant with all of the above on the menu.
Would be a nice joint, for sure !
