I cant speak for anyone else, but those small ones come with their own little tater chips (the tails) and those are the best part of the whole fish to me.

Hope you didn't get a bone stuck in your throat! We have crappie down here, southern version of walleye. Anyone still sell those walleye sandwich's at the NTA convention's? Was only time i ever ate that big eyed fish and they were GREAT! After eating crappie filets it made those bottom feeder's not taste so good. Gator cooked any which way is like chewing on grand paw's old boots. You can cut the back straps out of gar if you want to know what it taste like.

I grew up in yankee land where the main fish eaten were walleye, yellow perch, and bass. Trout and salmon too but I never much cared for them, especially not salmon. Young rainbow trout are edible.

Moved to IL where all anyone ate was catfish. Never much cared for it... I put in the same category as rainbow trout...edible. If someone cooks either one, I'll eat it... same with bass. But none of them are what I would call good.

Moved down here and got turned on to eating brim (sunfish for the yankees) and crappie, and now that, along with walleye and yellow perch, are what I consider good.

I'll stick to spring caught cold water crappie filets, crappie bluegills and perch thru the ice and early spring walleye filets
That's living. Don't have to deep fry it to make it palatable
