When I was a kid a saw my grandma grab many by the tail and cut their throat and bleed them out. She would them par boil them and bake them with a lot of sage and pepper. We didn't have much money and I thought everyone ate possums until I got and moved away.

I donated a large number of opossums to a study on diseases and parasites in Ohio, that Wilmington College took part in. They found bubonic plague in opossums, that I caught on my farm. Fortunately, it's not fatal to people much anymore.

I posted this on another forum earlier.

Had a few back legs when we were in our teens. We tried everything we caught. Possum, woodchuck, skunk, muskrat, coon, fox, beaver. I never do recall eating mink. This was a long time ago. Only ones we really like were beaver, coon, muskrat and woodchuck

Beaver and muskrat are delicious, groundhogs are okay, better when they are young. Never tried coon yet.

A man I worked with who is long since retired and passed away told me when he was in the military, he met some guys wherever he was stationed who hunted possums and caught them alive. They took them back to their farm and kept them in a pen and fed them a better quality of food. He said after a couple weeks the possum got cleaned out and slicked up and looked lots different than when he was caught. Then they were butchered and eaten.
