Help me out folks. I have 25 pounds of ground venison and pork fat to make into sausage. I want to make a basic breakfast sausage flavor, with salt, pepper, sage, cayenne, garlic powder and brown sugar. I have no idea how much of the various seasonings I need for 25 pounds of meat Anybody have a recipe or formula? Thanks in advance!

I never use a recipe for breakfast sausage making but rather I add what looks right to me, fry a tiny patty, taste it, and adjust as needed until it's where I want it. I can tell you it'll take a lot more sage and salt than you think. I'd start with 5 oz of ground sage in 25 lbs of meat. Garlic powder goes further than you'd think so eer on the light side of it. I prefer red pepper flakes to cayenne in mine too. Good luck to you, I bet it turns out great.

Any idea where you’d start as far as salt and pepper??? How much hot pepper flakes to 25 pounds?

There are a lot of good pre mixed breakfast sausage seasonings that are packaged for 25 pounds of sausage
I mix it then usually add extra sage because I like it with a lot.

Lol, glad to help buddy.

I like a lot of pepper, so I'd go with 1/3 cup, and probably add more later. I don't think it'd take less than 1/2 cup of salt (probably more) but you probably better start with half that, I tend to like salt too. Red pepper flakes aka crushed red pepper, kind of a "to taste" type thing but a whole 1.75 oz bottle would be where I'd start. 25lbs is a big batch and I really like to taste the seasonings. I'd add 4 cups or so of ice water to it too while mixing, I'm not sure why but I read it somewhere once and I like the consistency so I do it now.
