Just thought this would be a food that is not affected by the inflation we see in grocery stores. Maybe roll the cracklings in a special breading.

When I render the fat, it always smells a bit like rancid fried chicken. I can't imagine it would taste good.

A better use for them, after skinning rub a little bird seed on the coon's back and lay it outside for the birds they love it
After they have picked off the fat take it to a field and put it along the woods line to feed the bigger birds
I like to put them where my mother can see the hawks and eagles from her house

Clean coon fat rendered cracklings are fine eating and the rendered grease is great for frying whatever.

We have a wild cooking demo on occasion at our state convention. A few years back, the cook rendered some coon fat and offered up the cracklings to the audience. They were gone in a hurry. He then fried up some bobcat steaks in the rendered oil. They did not last long either.

BTW, the rendered oil remains liquid at room temp and remains stable for a long time.

I tell the kids, learn to trap and snair and you'll never go hungry.
Personaly I prefer coon over pork, not sure about the lard or the crackling. But I would think it would be like bear.

I have tried coon, but I've skinned enough greasy, wormy coons that I'd have to be starving to actually eat one or anything rendered from one. Fortunately, there is plenty of other good stuff to eat!

I had to eat more than my share of coon, grinners, what ever road kill was picked up on the way home from somewhere that wasn't there on the way to wherever we were headed. I might try one that someone else made. But I'm not wasting good grease that I can be cooking fish or something good in to make them

i dont eat them but there wouldnt be any thing wrong with them theres nothing stinks worst than pigs and pork cracklings get ate ive rendered several barrels of coon fat oil as i fleshed the coon what i can tell you it is some of the best coon bait you will ever use

Probly good coyote bait sprinkled over a flat set. Pork crackling works well.

I have read where coons are distant relatives of bears. So the meat and fats should be similar. Just don't know about the parasites.
