Made a batch of duck jerky for my buddy today this is my first time making duck jerky I can’t tell you if it’s good or not cause I’ve never acquired a taste for duck I did take a small bite of it but I didn’t want another one lol hope he enjoys it I make 100s of pounds of deer jerky every year but this was my first duck

I have a buddy that makes a pretty good goose jerky. Haven't used duck because they get ate in other ways.

I make goose and duck "pastrami", goose comes out better but both are good, Too good to make jerky out of.

Duck is gourmet but the problem with duck is that its easily over cooked and should be eaten more towards the rare side... knowing that I'm not sure how jerky would turn out... with enough marinade maybe it just tastes like jerky I guess.

Somewhere there is a video of Bourdain duck hunting and the hunters saying that they weren't great eating so Bourdain cooked them for them, rare, and it was really good. He said something to the effect that if duck is on fancy menus it must be good the problem is people over cook it making it real gamey for lack of a better word and think that they don't like duck then. I found that interesting but I'm not a big water fowl guy.

Haven't made duck jerky in long time yours looks good to me. My most recent thing was duck and goose summer sausage. People that tried that didn't dislike it. I will say I believe duck can be an acquired taste. As others have stated it is easily over cooked.
