I dump the guts out of every beaver as long as I have enough pails. It’s easier that cutting the castor & oil sacs out. The liver is actually a lot bigger that you’d think, great bait, and the frozen rib cage makes a great handle for hauling around.
That being said, I ain’t eating it, but I’ll have beaver stew tonight with these 2 little guys!

Why avoid them from the great lakes? What are they eating with more mercury in this area. Do the trees and lily pads have more mercury in them?

Strictly speaking yes the plants will have more mercury as well, but the water itself is actually contaminated. I believe Superior and Erie are the main offenders, but the entire water table in the area is suspect. The fish in the area is famously contaminated and I assume anything else spending lots of time in the water is bound to get a bit of a dose.
