That's why I like the smaller ones.

Those bigger bullheads (12" + long and about a pound or more) = muddy tasting.

We have 3 types of bullheads down here: black bullheads (aka mudcats), yellow bullheads (aka butter cats), brown bullheads (aka speckled cats).

I always trim away the yellow fat and give them a soak in buttermilk and they are hard to distinguish from a good channel cat.

Yup, I have the same 3 types up here but I’ve never heard them referred to as “cats” here.

we have the same 3 species here too. i always liked them 5-7 inches long cleaned, w/o heads or tails. seemed to be the best tasting size. catching some this spring that we havent weighed, but cant get a hand around them to pick them up. not called catfish here either, just bullheads.
