Hows eveyone doing it when it comes to savings there various herbs for later use ? We usually just let them grow and pick off what we need ...but this thing is growing fast then we can use it laugh

Air dry it. Then put it in jars. I find the dehydrated herb(s) to not be as flavorful.
Hang in on the stem till dry.

BBQ wood is the same. Fully dried, or God forbid kiln dried, hickory is worthless for flavor.

I’ve done what turtledale said and it worked really well, but I don’t know about your humidity down there.
