I usually just take a half loin and keep it in a log form. Season with salt, pepper and garlic to your liking. Heat up cast iron pan and sear it all sides...just keep rolling. Then reduce heat and continue rolling it every minute or so until internal temp hits 130. Let it rest 10 minutes and slice into medllions...... delicious

Now that's an interesting jerky recipe .

It's pretty good but I forgot the most important step, while deer meat is marinating get a beef ribeye & grill it up.

Season your loin however you see fit. I like salt, pepper, garlic powder, onion powder. Sear every side in a hot cast iron with butter and bake to desired internal temp. I like medium rare.

Make a bourbon blueberry glaze in a separate sauce pan.

Slice the loan into medallions and glaze the medallions.

Enjoy with a nice bourbon.
