Sounds like you have the notorious digger mouse or improper bedding maybe glue a small piece of cardboard to the underside of the trigger

I use the yellow big pan version and put a little peanut butter in the small cup on the pan. But I can see how the peanut trick would work too.

Use the Yellow plastic pan traps. They have a small bait cup that you can press a good paste bait into them the won't come out on firing. They can be used many times before rebaiting if you use a good attractant.

I trail / blind set for most of my mouse and rodent work once I learned their behavioral travel patterns. No bait needed. Cotton and fiberfill attached to the pan will work also.
