Looks good to me, Savell. I do like my roux thick as a stew...like my soup the same way too, but that's just me. Just as tasty either way. Your cuisine looks fine . Nice on a cool day too.

I cheat and make my roux in the cast Dutch oven in the oven. Couple hours with the lid on, even parts flour and lard.

I it in a pound of andouille sliced like yours and a pound of whole hog sausage crumbled. A save the legs and thighs off of my wild turkeys and boil the meat off. Then add a couple pounds of shrimp. Just the standard veggies and a heavy hand on the seasoning.

Man it’s too hot for gumbo but now you got me wanting it.

Hay hand must be nice just huntin deer in government woods and cooking gumbo some.of us gotta work for a livin

Savell doesnt seem like a bailer to me. I have the i pay you 10cents a bail, and all the cold beer you want to load, buck and put up out of my field vibe from him. Grunt work, but nothing more fun then doing then doing the copper head shuffle on a hot hot summer night after you kick over a 50 pound bail to buck up on the trailer.

Done my fair share of it. When we were done for the day it felt like I'd been mud rasslin a herd of turpentined porcupines. It'll make a man out of a sissy. That, or take him out of the gene pool.
