I can't help you with a recipe but in the hands of a mexican cook that knows their stuff it's pretty dang good stuff. I'd put it on par with good pork bbq in tenderness and flavor.

I gather that it's boil and long simmer in spices then shredding and more time in the spices.

We ate beef tongue 2 weeks ago for the first time. It was very good. We have 2 more in the freezer to eat and I'll get more tongues after that.

When I was a kid, and we were poor, that was the cheapest cut of beef there was. My mom would boil and slice them for sandwich meat; hated it.

Comparing a log of crap to a chunk of well marbled meat seems odd to me. Have you ever eaten a chicken egg? I won't tell you what end of the chicken it comes of, it might ruin your breakfast.

Ain’t no chicken egg. The tongue from a moose is around a 2-3# chunk of food that I would never ignore. And for you to proclaim that I have never ate a better cut is purely mornic.
