If eating plain, I like a little chewy.

If its in a sandwich or on a burger, I want crisp.

But, I won't argue with any bacon.

The fat melts in your mouth and the lean is just a bit softer than jerky. I get the southern folks wanting it chewy. Don’t want to take a chance and break off that last tooth. lol
