I haven't yet...But Yes you can proof in just the tins.

After bulk fermentation...then first shaping...then final shaping...

You can put the dough in the tins...then into the fridge for 24-48 hours.

Then pull them out of the fridge ...score them...and directly into

A 475 degree oven
