I am liking these tin baked loafs...Just out of the oven

650 grams of flour per loaf

Tin or glass pans?

How do you cover the pan for the first 20 plus minutes of the bake. My instructions are to cover for 23 minutes then remove covered dough and finish the bake. I probe to make sure it is at 200 degrees.

Have you tried cast iron loaf pans? I’ve used tin and glass definitely like the tin over the glass but not sure about cast iron.

475 oven

Bake for 30 minutes ..then remove top tin...then bake for another 10 min on 425


Then....remove the bread from the tin...and put back in the oven ..on the wire rack

For another 8-10 ...or until browned to your liking.

I have nevah probed my bread for temp.

It's done Aftah 48-50 minutes of baking

If the cast iron loaf pans are like the Dutch ovens ...which needs to be pre

Heated..no thanks.

I cold proof the dough in those tins ...then pull them out of the fridge

Score them and right into the 475 degree oven...easy peezy

I started using Nessies method and it works great, nice loaves...I need to bump up the amount of flour to better fill the pan, been using 500 g,

Cooking is art, baking is science. Scales using grams (metric) get you a more consistent product.
