All that white is fat and needs to come off.

I was going to say the same thing about the fat but I was not sure if that was what that was.

Yes all that white should be fleshed off and look like the darker parts in your photo

I would give it my best shot. A one handed scraper might work also.

Don't leave any fat on Coon-

It should be said more bluntly…if that fat is left on, it will rot and hair will come off in chunks. If you need more assistance, let me know and I’ll send my number. It’ll be easier to text pics for you.
