…. I mean it’s bad enough ya’ll screwed up our nation… now ya’ll screwing up bbq lol

… but in all seriousness… real Texas brisket is cooked directly over mesquite coals in big pits … sometimes brick and sometimes steel

… there’s an old one me and my partner would use on Thompson’s place a couple miles down the road … but he passed and his grandkids kicked us out of there

As Savell says wood is the best but I’ve got some charcoal on mine also . Hickory and mesquite are hard to beat and pecan is pretty good

Easy now its not our fault you all couldn't keep from getting licked on you home turf.

I will say I absolutely loved the BBQ outside of Memphis at a place called road side BBQ. Sure didnt really care for the stuff I got in Kansas city. No clue how they messed up cooling meat so bad but I didnt finish it. But in Memphis I orders a 2nd meal and finished it there and got 3 orders to go it was so good.

Well I was kind of ticked you got wiped but you go and get all sensitive about it. You were not even alive at the time kind of acting like them color folk crying about reparations for slavery that have never been a slave, or picked cotton. Heck I have picked more cotton than any one I know regardless of collor and that was not much.

In the grand scheme of things the south just couldn't compete with the north's industry capacity. Same way the Germans couldn't compete with it in ww2

my country has gone to crap, so the outcome is crap. Not sure it would be much different the other direction considering man is the problem and men are on both sides. I can say I believe in limited government and states rights and thw federal government is bloated and out of control.

you didn't say what specific model you have , gas, electric , wood?


running around 250-275 internal cook chamber temp your meat should reach temp in about 40-60 minutes a pound depending on the thickness.

wrapping definitely helps once you have a good bark on the meat.

wireless thermometers are very nice because most will tell you the temp at both ends of the probes so you can see actual cook temp

chicken thighs is a good way to get better at smoking easy success not a lot of cook time.

take your meat out a few hours before cooking and let it come up to room temp or close to it , if you are fighting a 35 degree peice of meat vs a 65 degree peice of meat that is more to have to raise.

covered in rub which is largely salt it shouldn't spoil in a couple of hours on the counter.

get more smoke in the meat with a colder piece of meat than one at room temp.

I think all of ya spend too much time and effort on brisket. Just get a couple big ole chuck roast and throw em on the smoker. Flavor is fantastic.

I'm a bit thrifty, so that's what I prefer.

One important thing is make sure you run the internal temp of the meat to 200-205.

It's not prime rib.

…. I slipped in the one thing needed in order to tell when a brisket is done…. Whether it’s been 20 minutes or 20 hours…. No temp probes or whatever kind of technology ya’ll are talking about

…. Of course everyone just blew past it cause google told them something different
