Black Locust most of the ones that buy my honey like it the best but I like most of the area honey,

Years ago, I belonged to a Honey Association. We used to sell Honey Sundaes at our county fair. Vanilla ice cream topped with honey and sunflower seeds. Sold a lot of them.

If you have maple trees in the area the best tasting honey ( it’s almost black)in my opinion is winter honey. You don’t want to take much as it’s a critical time of the year for bees to survive but on a double deep hive I’ll pull a frame from each and make sure they have enough resources to make it to spring.

Bought a jar of mesquite honey in Arizona, it was great.

In years past I've worked on the water wells for both bee keepers in south eastern countries Mt where I called home then,.
They both gave me a bonus bucket of honey from various fields mainly alfalfa hay .

From the one company it had a cinnamon flavor the other was plain I enjoyed both ! I've also had some canola honey that's very good also !

Never see a surplus on maple, maybe once in all my years, as the bees use it as fast as it comes in to make brood. We only have soft maples red, silver, florida, chalk, and boxelder and the bloom starts end of January with the red, florida, silver and goes to mid February. Then whatever is left goes right into the early holly flow.
