I spent 3 months building and tearing down cell towers in Thibidoux. Spent a few days working in New Orleans . I discovered why they have hot sauce areas larger then our beer and licker areas in our stores up north. Figurees i was geting the authentic dining experience at Mothers on Burbon street garing the samolar platter. Nope not anything I would call good. Better then Indian but not my cup of tea. They needed all the hot sauce to cover up the tast of the crawling stuff they call food.
