ground or cubed and frozen or aged ... it's BAIT ... no deer liver for this ol' boy fried chicken livers ... now I could probably eat my body weight in them ... and that's a lot

Wash it well, trim un-red meat, soak in milk, batter in flour and fry.
Crowkiller thats pretty much the way i do it,unless i`m in the woods and don`t have milk,then i use salt water

Caught a mess of weasels last year on deer liver. Just cubed it up into about 1" chunks, hung it above the trap pan in the box and BAM!

FYI: The Liver is excellent eating, And comes in 2 sections, the firm side is the liver, and the spongy side is the Pancreas, (actually a seperate organ) and is not edible, I usually chop it up and simmer with a couple of boxes of corn muffin mix as a topper for the hound dogs feed. Make sure to remove from the rest of the gut pile and cool as quickly as possible.
For the liver, slice up several large onions, and saute' a bit to brown, then add water and lay the sliced liver on top, cover, and let cook till the water is gone. YUM YUM

Those who knock it, say what you want, but liver, deer, beaver, calf or chicken, is high in Iron and increases red blood cells within your body. It is high in purines (which is Uric Acid) and anyone who is prone to gout or kidney stones should watch how much organ meat, protein they take in. I know, I'm a dual transplant patient ('89 kidney/pancreas) and after that, too much protein or organ meat (I love liver and could eat a pound or two at a meal) I must take in moderation.
Oh, the kidneys filters the impurities within the body from the blood.
Never eaten any deer liver, may need to give this one a try and I'm headed out tonight for a 2 day deer hunt!

We used to eat the pancreas out of hogs... called it sweetbread... do you know how to cook kidneys? put in a big pot of water and boil the pi$$ out of them.... ;-)
