Ribeyes and Delmonicos are both taken from the top of the beef rib.(backstrap on a deer). While the Ribeye has most of the fat left on and the bone left in,,the Delmonico is taken from the most tender part of the rib,and has some fat trimmed off and the bone removed.Generally speaking.

It's a east coast thing I think. We call them boneless ribeye steaks. They call the Delmonico steaks. Whatever, you call them they are the very best cut of a beef you can buy IMO.

We have weather that makes grilling for me not doable at times. A good steak cooked in a good cast iron skillet is something to be reckoned with. The crust, the seasoning, the smell, and perfect doneness. We do it at home and camp when the weather won’t allow the grill to get hot enough.

We had home made enchiladas in green sauce tonight. I am plugged full and well satisfied.

I could see that in your neck of the woods. Here we would rarely have to wait more than a few days before we could scoop the snow off the grill and go to cooking meat.

That looks pretty darn good Sharon. I am having some of that hearty bean stew I made yesterday. Always tastes better on the second day warmed up

A bowl of goulash this evening.

Had a get together earlier for Iowa Trappers Talk website. We had smoked wild pig, gumbo, baked beans, sides & salads, and lots of desserts at lunch. It was a great time.

Funny how some foods taste way better the next day. We had a nice tri-tip and charred corn on the cob as the side.
