We have been cutting and canning venison the last 3 days. I had forgotten how much time it takes to process, can and freeze a few deer. Just havent had the spare time in recent years to do it. I talked our neighbor into helping me which surely helped with the work load. I was running two pressure cookers at a time. Ended up with 59 pints and quarts of canned meat.with several bags of tenderloin. I will do the ground meat tomorrow.

All decorated for Christmas now. I am glad that is out of the way.

Looks good. Think I will can some to. I'm not a big fan of sandwiches, but a thick slab of buttered home made bread with canned venison on it is hard to beat. When I was a kid gramma set that in front of me for lunch often.

We get ole Nessy to share some of his Sourdough bread we would be set for a while Danny. I think we would have to rest a spell after eating all that bread and canned venison.

Looking great!

I’ll be canning a bunch in a couple weeks as well. Down to just a few qts and pts, need to restock. Sure is satisfying when it’s all done and you look at all the jars. Its like looking at a big stack of fresh split firewood.

This batch will last me a couple years at least I am sure. A few jars will be given to friends and family to enjoy.

I know the feeling about the pile of fresh split and stacked firewood and the smell.

Never made canned deer meat. All mine goes into jerky or summer sausage or meat sticks, except the back straps, I do steak them. It looks like quite a process there Bob.

Or thicken the juice up a little and serve it over rice... or thicken it and add a little sour cream to make stroganoff over noodles... or or or....
