Had a little bit of left over sap from bottling so give it a little more time and boil it down some more into maple sugar.

I've only had maple sugar once, back when I was a cubscout,when we went to a maple syrup demo. It was really good. I have acres of forest on my farm and the only maple is a not very big silver maple in the fence row with one of my neighbors. I helped a friend make syrup one year at his place, but we got started late in the season and only ended up with a small amount of watery syrup.

I've been tempted to make black walnut syrup. I have a lot of black walnut trees. I haven't because I don't want go hurt their lumber value.

It turned out really well and I can use it in almost recipe as a sugar replacement even though it leans more towards the brown sugar side. Definitely a lot of trial and error through the years as sometimes you don’t boil long enough and other times you just burn it and the raccoons have a smorgasbord out in the woods.
