Anyone have a clue on the temperature swing when the oven is set at say 350?
Miss Daisy is driving me nuts, sets the oven at 350 and complains when it cycles on and off, she expects 350!, tried explaining how the thermostat works but it ain't sinking in, lol

I recalibrated the temp range and getting a 55 degree swing in temps using a good thermometer...seems high to me but Mr Google claims a swing of 35 - 60 degrees is "normal"
????

every oven is different , pretending it isn't is a recipe for recipe failures.

50-60 would not surprise me it is definitely going to be hotter when the gas is burning than when it shuts off

55 degrees on a 350degree oven is a 15% swing when you say it that way it doesn't sound so bad 7.5% above and 7.5% below target makes it sound even more reasonable.

a wired probe thermometer in the oven to see what you really get and then adjust what you set the oven too to compensate

Do not do this with your cordless thermometer as most can not take that heat , it kills the battery/capacitor in them.

my gas oven runs about 25 degrees hot all the time is what I figure so I back down 25 on the dial.

where in the oven also matters

it takes around a minute for a standard glow style ignitor to fire and it needs to run for a few minutes then it can cycle off so that swing isn't that odd.

a large dense mass on the bottom shelf might reduce the spikes like fire brick or a big cast iron pan or griddle to diffuse the heat

my youngest is a pastry chef they have very nice ovens at the school where you can control temp and humidity , convection on and off , so many features and some of them are so large you can walk in them.
you know incase you need to cook 24 dozen cupcakes an hour and have them all come out right.

before anyone thinks well electric ovens don't do that they absolutely do and how near or far your pan is the the heating element makes a big difference.
I have also run into large bakes of root vegetables that the electric oven holds steam badly to the point it burns the user when the door is opened without standing out of the way. Happened to me on my mothers oven at easter this year I backed up quick and it was like a sun burn but it was a face full of steam I had not gotten with my gas oven doing the same thing.

You may as well just take it back and buy her the electric one she told you she wanted in the first place, lol. Just wait till she tries to "simmer" something on the burners.... lol.

Nah...we've had gas ovens for 40 years, lol, we've figured out the simmer thing. this is a new one, replacing one leaking gas.... apparently a larger swing than the old ones, thermostat probably made in China, grin

gas simmers very well if you have good range and distance from the burner , the up side is you can easily raise a pan above a flame not so easy with a contact based electric burner.

eclectic has on and off and it is high but for a short duration

now if you want to have some control induction cook tops are nice , but also require the right pans, I have a separate induction hot plate
because it heats the pan through pulsing magnetic fields , the pulse can vary quite quickly to compensate for the over or under temp.
most also have a temp sensor that measures the under side for the pan temperature and adjusts every few seconds for the temp with shorter or longer pulse times.

it is still an on or off digital thing but the variability is much greater
