How many do this and how many just leave them on? Does any one seem to realize any deductions for leaving the nose and wiskers on a beaver pelt, or should a guy even worry about such a thing?

I watched the NAFA guy while he was at the NTA convention last year doing skinning and boarding beaver. He cut the noses off completely and cut the ear off flush as well. And I must say he was very good at it. He used a Necker knife. Chub

You should always remove the nose and whiskers of the beaver. It will speed up the drying process. If you leave them on it is not counted in the measurement for the sizing.

When I flesh them, the last thing I do is clean up the face a little bit. I will take my fleshing knife or a normal knife and cut behind the nose and take both cheeks with it. I think its pretty close to a straight cut, comming back a little on each side to get it all off. I would have to throw a pelt up on the fleshing beam to remember (I put those fleshing memories out of my head after they are done).
